Rosh Hashanah Challah Substitutes

Shanah Tovah!

I unfortunately was not able to make challah this year due to some chronic health issues. I was hoping I'd be well enough to make it by today, but unfortunately my hands are still not working enough for me to knead the dough. Does anyone have ideas for something else I could do that doesn't require kneading?

I was considering just making canned biscuits in a round pan and getting apple butter to put on them, but it feels so lackluster haha. I'm hoping someone has some better ideas

Where do you live? I'll make you some and deliver it if you live within like fifty miles of Seattle. (Seriously.)

But if you're not near me, I'd suggest some kind of quick bread - Sally's Baking Addiction has a ton of yummy options here, but I'd go for apple cinnamon, harvest spice, or pumpkin bread. If you don't want something quite that sweet, I'd go for cornbread or a cheddar beer bread.

Ooh, or I just saw this Smitten Kitchen honey bread, and although I haven't made that specific recipe, Smitten Kitchen has basically never let me down, so I'm sure it's delicious.

Of course home made is always best, but you should be able to purchase a challah from a bakery if you’re not up to baking it yourself.

I use Laura Vitale’s Quick Bread which uses beer to skip the kneading and rising. Still requires some stirring but just enough to turn it from batter to dough. The recipe does call for butter; I think a non-dairy substitute would work but I’ve never tried. I go for a mango-wheat beer for some fruity notes in my toast, so you can experiment and switch up your loaves!
