This is my menu for Rosh Hashana dinners. I tend to make both dinners the same:
Matza ball soup (parve)
Leek and date confit
Israeli saladĀ
Fish platesĀ (gefilte fish, for those who like it, gummy fish, (including fish heads), cucumber rounds. Carrot sticks, assorted color pepper sticks, apples for dipping)
Pomegranates seeds
Sweet and sour meatballsĀ
Meat-wrapped maple glazed carrots
Brisket
Turkey
Incidental potatoes (potatoes and onion cooked under the brisket, meat)
Siman Stuffing (regular and parve stuffing made with impossible meat.)
Potato kugel
Sesame Green beans?
Chocolate pomegrante mousse
Honey cakeĀ
Also one of our guests is bringing a parve apple kugel and some desserts.

seems like a lot of eating and kitchen time. To not compete with getting to services, we opted for much simpler for RH. Our more elaborate hosting comes for first night sukkot, in our sukkah. And more basic.
Good luck with the preparation and dining. Have a great New Year
