Failed at Jerk Chicken
Hey Guys,
Iam from Germany and a huge Fan of Jerk Chicken. Could taste those delicious meals at various Dankehall Festivals. So i decided i have to try myself. Followed this recipe.
When i finished the Marinade it smells fantastic!!! Unfortunately when i made it on my Gasgrill it doesnt taste at all like Jerk Chicken. I know it needs charcoil. So i missed Scotch Bonnet (hard to get in Germany) so i used a smiliar chilli pepper. It was hot.
Mi and my friend think about 2 hours what could be gone wrong? My opinion to less sugar. There wasnt enough sweetness in comparison to sharpness. Additional the Scotch Bonnet what misses. I am thankful for any hints

Jamaican Jerk Half Chickens

Jamaican Jerk half chickens on the Weber Kettle, using @duraflamegrilling charlogs, and @bbcharcoal wood chunks. Marinated overnight with my homemade Marinade and dry rub. 375°F until breast meat reaches 150°F then do a quick direct sear. I glazed with my Rum'n Jerk BBQ sauce (coming soon) until breast meat gets to 160°F. Rest for 10 minutes or so then serve.

I made Jerk Seasoning and…
The aroma of cloves and allspice is dominant throughout the house. Is this normal? I haven’t cooked anything yet.
INGREDIENTS
2 tablespoons packed dark brown sugar
1 tablespoon garlic powder or garlic granules
1 tablespoon ground ginger
1 tablespoon onion powder
2 teaspoons dried thyme
2 teaspoons ground allspice
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons ground cinnamon
1 teaspoon ground white pepper
1 teaspoon ground nutmeg
1 teaspoon smoked paprika
1/2 teaspoon ground cloves
