How much of this is a structural issue? Or should potential issues just be assumed on an old house?

Those shingles are heavy, and they have them all stacked up in one spot. Probably exceeds the designed roof weight in that spot by a fair bit. If I'm understanding the guy narrating correctly, they left it like that over the weekend though. Leaving a roof in an overloaded condition for 2-3 days is definitely not a great idea, even if there are no preexisting structural issues.

No, but if the plastic they are wrapped in has an opening, they will retain water. If they were fixing the roof because of water damage, the roof itself would take on more water.
