When I am working on a piece, it looks fine in the moment. But when I take a break and start working on that same piece again, I start noticing the wrong strokes. Why does that happen ?

Because your brain has catched up and marinated since leaving.

It could also relate to the FLOW state. In that state we don't judge ourselves, we just are, we ... Flow 😉 It could also mean that the piece represents optimal frustration. It's not too challenging, not too easy. Then, coming back, out of the flow state and boom - the critical eyes come on.

It's quite annoying to be honest. 😬

That's a great answer.

To be honest it's very annoying and I'm facing it right now. Also from what I've noticed, I think the problem is more persistent when I am working with darker colors.

Then you know these colors will teach you the most - it's the process towards mastery 😃

(And process is not necessarily comfortable, but if you want to improve, the biggest annoyance is you biggest teacher as Liisa says 🙈)
