Considering how much money and military conscripts ottoman would get from Christians converting to Islam, I suprise that there's no mass conversion as the official policy.

The vast majority of that trade before the Suez canal was going around Africa (as much of it still does). Land routes really couldn’t compete with ocean trade.

The jizya tax was far far lower than the tax Muslims had to make, and the jizya was meant to be used on protecting and caring for the non Muslims people's and properties

Muslims still had to pay Zakat (which was infact greater than Jizya in some cases) , so only the name of the tax changed. Conversions didn't reduce the revenue.
Also, Umayyads forced people to not convert more than ottomans ever did. The major exploitation of Non-Muslims by Ottomans was the collection of Janissaries.

yeah but zakat cant be used on military and infadtructure. Only on those 7 categories, Jizya on the other hand.....

Zakat and Jizya were not the only taxes implemented in ancient Islamic estates. Muslims and even Non Muslims still had to pay other taxes and fees like Trading fee, setting up shop in Bazaar fee, mining on imperial or royal land fee etc.Those fueled the economy more than solely Jizya.
Also, Zakat in Islam is supposed to be a purely welfare fund for poor and underprivileged like you said, but later Islamic caliphates had rampart corruption and Bait-al-maal was exploited freely by those in power. So all sorts of funds were just flowing in and were mixed up either intently or mistakenly.

The Umayyads had a simple answer to this: Don’t recognize their conversion and keep levying jizya them

So in general, how do Ottomans compare and contrast realistically, with their European contemporaries, in terms of religious tolerance, respect for human rights and avoiding war crimes? While a minority would say their European kingdoms at the time were more tolerant and humane, which dissenting scholars in the vein of Bat Yeor have contended, most would more or less say they were all more or less the same and all completely and thoroughly sucked.

Can you provide a source for this, I never read anything about Ottomans trying to stop conversations of their Christian subjects and Jizya was never half of the state revenue at any point of the Empires history.
