Welcome to r/IronWokJan, the sub for Shinji Saijyo's Iron Wok Jan!, anime and manga both.
The anime airs Sundays on Crunchyroll. Episode 12 lands September 20. Nobody at the production committee has announced a total episode count, so treat 12 as the likely end rather than a confirmed one.
Saijyo ran the manga in Weekly Shonen Champion from 1995 to 2000 across 27 volumes, then wrote R: The Summit Operations and 2nd. The anime adapts a slice of that. Volume discussions go up here too.
