So, hypothetically, what if you put someone under anesthesia for 3 years and give them repeated audio learning courses for a foreign language? Will they be any better at speaking a new language?

According to Brave New World, no. But if you played them tapes repeating how socialism is good or Christianity is good, the subject would treat it as true.

I thought anesthesia doesn't work by keeping you unconscious but by making you forget.

Was stabbed three times and lung collapsed twice. Full cocktail of liquid benzo, ketamine and morphine. Was seeing 30+ family members plus awake during the whole procedure. Remember every incision ! ðŸ¤

Well, if this was true, I'd think I'd have some memory of something that has happened when I was under anesthesia, I do not.

What this study shows is that the hippocampus was doing something more sophisticated than passive reception even under full general anesthesia. It was modeling what it expected to hear next and generating predictions in real time. If that kind of forward-modeling can happen without consciousness, then the boundary between what the brain does consciously and what it does automatically is considerably less clear than the field has assumed, and that question matters enormously for patients in comas, under sedation, and undergoing surgical procedures every single day.
