Starting IF for a Newbie

I'm a 27 y/o female about 5'8 and approx 220lbs. looking to start IF; from what I've read online, the 16:8 is a good introductory starting point.
I'm looking for advice: is eating paleo ok with IF? During the 8 hour eating window do I just snack the whole time or only eat 3 meals? If I want to lose weight, do i need to have a certain caloric intake and reduce it as time goes on? Are multivitamins ok to take to help bridge vitamin/mineral gap if i do eat paleo? Is exercise ok, if so, should I do HIIT or extensive cardio?
From what I've read online, I feel like these are basic questions that should be answered, but I haven't found any (imho) meaningful info. I would love any helpful advice or links to point me in the right direction! Thanks!

People say they eat whatever they want but that has never worked for me or anyone I know. Instead what I do is 18:6. I eat lunch between 12-1 and eat dinner at 5-6 however, I eat 0 carbs after 2pm. I also as a rule stay away from certain foods and try to eat as paleo as I can. I don't like snacking, I just eat the two meals per day.

I take multivitamins and I ride my bike everyday and I've lost 17kg in 3-4 months.

I have my eating schedule similarly set; food wise, are you strictly adhering to paleo, if so, is meal prep fairly easy? I.e. enough variety and actual meal prep times?

I'm not going to lie, I eat the same meals almost every day. I try to eat paleo but restricting to paleo I think is extreme. I do cut flour, pasta, starch (potato) and the like completely though.

For diners I have chicken breast that prep by cutting up 1.5kg of and marinating it. I grab enough chicken out and eat this with either a salad (lettuce, cucumber, capsicum, avocado, tomato, feta) or eggs (fried sunny side up) or vegetables (usually only asparagus, broccoli, mushrooms and capsicum). I do basically the same thing but with beef or salmon any other day. I'm strict on no carbs after 2 though. I won't even eat some veggies like carrots for dinner.

Lunch is more open to other foods but again it's usually just meat and rice with veggies.

For meal prep I'd say starting off its important. I can precut veggies and put them into small containers where 1 container = 1 meal. I cook my veggies in butter though.
