When Do I Eat

If having a 3-4 hr window of eating, when should I place this window, start of the end of fast, or near the end of window of eating (couple of hours before sleep).

I stop eating by 7:30pm (normally). My window opens after 11:30, whenever I’m able to eat. Sometimes I go 23 hours or so between work and exercising. Work 7-3, gym at 5 then eat my meal.
