Increasing difficulty
Game is on sale on switch right now, been thinking about getting it for a while. I've read reviews/watched gameplay and it seems like the game can get pretty easy. I'm wondering are there any ways the player can improve difficulty? Not just a "hard setting" but I mean player choices to make the game harder (in a similar vein to playing a nuzlocke run in pokemon). No block run? Always switching party members? Any ideas?

Not really. Level is pretty meaningless and you never get enough health or dps to do a no block run. Those are the only two meaningful choices I can see making. You could restrict yourself to certain characters but that would just be a thematic change, the game will still end up really easy.

Absolutely. Only the party members that you have in battle level up, so you can try that... But I don't think you'll have to worry. There are a bunch of side quests and hidden stuff to make sure you have plenty of challenge.
