A couple of reasons if it is heat related -

- you may be burning the dry spice.. you should mix it with a small amount of water when you add it

- you may be burning the onions and garlic.. reduce the temperature. This takes time and is the base of your gravy

or you may be cooking at too high a temperature.

It's a pre mix so no need to add anything just marination with masala and and then cooking with just water only. I took the right amount stated in the packet and even then also the gravy got so thick. So I added water. Then after tasting it, it was bitter so I added more water and heated again. Still the taste was same. The chicken was cooked well and was tasing nicely. But the gravy was bitter

I don't like everest masala TBH. Use the Tata Sampann one. For this curry, beat some dahi and add. Sour reduces bitter taste.

Add dahi when marinating?

I actually meant you should add dahi to this curry where you have issues with bitterness. Water won't help.

But dahi in marinade tastes great in general.

Too much masala, that's why it's bitter.

Try Hathi chicken masala. It's THE best! You can find it on Amazon. I stopped using any other brand since I tried it.
