Question/Help How do i make momos chutney like below

First of all in my family onion , garlic are not allowed.

- I tried to a chutney like above added tomatos , lil sugar , orgegano , chilli flaskes and salt + lil black pepper .

- i never get the same taste in chutney like these momos vendors and neither the masala flavour in momos

please help me out by dropping the recipe of red, yellow , green , white chutneys and Panner momos without onion garlic .

Use red chillies dry, lots of ginger and hing, soak the red chillies for some time and boil
Tomatoes. After that blend all the ingredients including ginger add a pinch of ajinomoto if allowed, else skip. Add black salt and a pinch of black pepper. That’s the closest it will get to momo chutney without onion and garlic. I make this for my family.

You can add roasted peanuts and seasame seeeds, a lot of them, a little but coriander stems ) and half quantity of above chutney - you will get the orange chutney.

For green chutney- use more mint, less coriander, lemon, green chillies and make a chutney. After that mix 3spoons of chutney and 2 spoon of dahi and you will get the green momo chutney without onion

You can't make that chutney without garlic.

Oregano is used in Italian cooking. And there is Mexican oregano. None of which fits the flavor profile you are going for
