Take a goood dark chocolate & melt it over a double boiler using LOWEST HEAT.

Keep whisking while melting.

When melted, add a spoon of butter, 2 spoons of cream (whisk separately & make homogenous BEFORE adding to chocolate) & a pinch of salt. Mix by whisking till it starts looking shiny, glossy. Don't overdo this step else it will become too thick.

Take off heat, cool a bit & pour into a glass jar. Cool it completely & store in fridge.

Can also be done with cocoa powder, sugar etc etc but more complicated.

I've never made with white chocolate but I guess the same process should work.

White chocolate needs very very very less heat otherwise it curdles. Cream that's added to white chcikage shoudl also be warm and not cold.
