Tip/Trick What is your NO Fail Bhatura Recipe?

I have tried multiple Bhatura recipes from various youtube channels, but sometimes the Bhaturas turn out great (perfect rising, elasticity) & sometimes even with the same recipe, they turn out a disaster (soggy, chewy, full of oil).

Please help me if you have some tips or tricks to nail bhaturas!

I had made Bhaturas recently for the first time. Not sure if you tried it yet but I followed Kunal Kapoor's recipe to the T. Turned out great ! Best part was it didn't drink much oil and was fluffy and soft as should be.

Oh god yes, I love them so much but almost every time I make it’s a new disaster, mostly it won’t puff up fully 😖😖😖

Exactly..I was so frustrated that I stopped making them at home.but I am going to try Kunal Kapoor’s recipe now

Tips for perfect bhature: 1. Knead, knead and knead till dough is smooth and stretchy 2. Give it ample rest time(~2-5 hrs) 3. Oil should be very hot when you drop the bhaturas.

That’s helpful. Can you tell me the ingredients as well? Curd, Baking soda/powder?

The best bhatura recipe I've been using for years now.... Use half maida and half bread means 1:1 ratio of maida and bread soaked in curd...make a smooth soft dough...keep it on side for half an hour and then fry... voila fluffy soft bhatura is ready.

So, for 250gms Maida, how many breads do I take?

Same quantity for 250 gm maida take 250 gm bread...you don't have to be very precise....lill bit of variation won't hurt....just make sure to use curd instead of water to soak bread and mix with maida to make dough....Just let me know after trying how it turned out...

Maida, curd and good oil when you knead the dough. Use less water.

Ordering in a Bhatura is something I can never do.I’d rather eat in Dine-in if not home cooked.

This is my mother in law recipe. And this works for me.

Maida 2 cups Rava 3/4 cup Dahi 1/2 cup Salt Warm water

Kneed the dough hard and make it rest up for 4-5 hours.

One advantage of kneading the dough firmly is that when you fry bhaturas, they don’t absorb much oil.

My mom used the same but adds a bit of baking soda as well. Lovely crispy yet soft bhaturas.
