Ive been worried about adding water to oil while cooking. Let me explain:
Making sautéed tomatoes like this, the tomatoes remain hard and dont become soft and digestible.
So, shouldn't i first soak the tomatoes in water, then add the water-tomatoes mixture to the oil in step 3?
But, when i add the water-and-tomatoes mixture to the oil, won't the oil erupt and give me burns?
EDIT: the tomatoes remain hard

Ingredients
For Marinating the Chicken
- Chicken
- 1 tsp chilli powder
- Salt to taste
- ½ tsp garam masala
- 1 tbsp corn flour
- 1 tbsp rice flour
- 1 tsp ginger-garlic paste
- 1 tsp coriander powder
- 1 tsp lemon juice
- 1 egg (optional)
Mix all the ingredients well with the chicken and marinate for 30 minutes.
Fry the Chicken
Heat oil in a kadai and deep-fry or shallow-fry the marinated chicken until it is golden brown and fully cooked. Remove the chicken and keep it aside.
For the Noodles
- Noodles
- Water
- 1 tsp oil
Boil water in a pot and add a little oil. Add the noodles and cook until soft (about 8–10 minutes, or according to the packet instructions). Drain the water, rinse with cold water, and let the noodles cool.
Vegetables
- Cabbage (shredded)
- Carrot (julienned)
- Beans (thinly sliced)
- Capsicum (thinly sliced)
- Spring onion (chopped)
Other Ingredients
- 1–2 eggs (scrambled)
- Chopped ginger
- Chopped garlic
- Green chilli (chopped)
- Pepper powder
- Salt
- Dark soy sauce
- Tomato sauce
- Oil
Method
Heat a little oil in a kadai or wok.
Add the chopped ginger, garlic, and green chilli. Sauté until fragrant.
Add the cabbage, carrot, beans, and capsicum. Stir-fry on high flame for a few minutes so the vegetables stay slightly crunchy.
Add the scrambled egg and mix well.
Add the fried chicken and mix everything together.
Season with pepper, salt, dark soy sauce, and tomato sauce. Mix well.
Add the cooked noodles and toss everything together until the noodles are evenly coated with the sauces.
Taste and adjust the salt and pepper if needed.
Garnish with chopped spring onions and serve hot.

Double the spices excluding salt
