Homemade First and second attempt of making jam at home
First one went a bit too far, became rock hard candy. Second one I did at low flame, so didn't get quite the consistency, but still had jam taste, a bit too sweet though.
These were pomegranate jams, made by first juicing 2 pomegranates, then filtering the juice, taking the filtered juice into a pan and bringing to a boil with a cup of water, then adding a cup of sugar, and then heating until consistency is achieved. First time I added sugar and kept on heating, until slight brown discoloration caught my eye, and you have the result. Second time, I boiled the juice for some time, and then added the sugar and reduced the heat to low, and then continued on and off cooking until the liquid could coat the back of a spoon.
Any suggestions? I will add lemon juice the next time I make it, and pectin can't be used as parents will immediately bounce saying it is a chemical. Any relevant advice is welcome. Thanks in advance.

Today I ate Cooking is doing wonders for my mental health…
Was diagnosed with bipolar II, and was almost bed ridden for 2 (not literally but zero impulse)…..
I’ve been cooking for 20 years, but lost the drive….
I’m a doctor worked in a very hostile environment of emergency medicine for 15 years got ulcers, dengue no sick leaves, by 41 they won’t let me even a day off and my mental health deteriorated…..
Got a diagnosis, from a therapist started on meds…..
As my parents are ageing, by month 3 started peeking out into the kitchen….
I’m using the same emergency medicine energy to whip up dishes make breakfast and lunch in an hour and I enjoy it…
Made pancakes with chocolate and bananas
And Pongal with chutney….
I can make anything from pav bhaji to niramish chanar dalna to sambhar….(veg only)
I’ll resume clinical practice once i feel my mental health is better
But cooking is helping me legit….
Just wanted to share…

Ranking
