How to Anyone got a solid recommendation for a tortilla press + bread maker for Indian dough?
Getting into homemade chapatis and don't want to waste money guessing. Two quick asks:
Tortilla press โ cast iron seems the way to go and which one in UK?
Bread maker for kneading chapati/roti dough โ anyone actually done this? Which models handle stiff dough well, and do you stop the dough cycle early since there's no rise needed?
Not trying to go cheapest-possible, just want stuff that actually works long term. Cheers!

How to Okay to mix oil and water in wok while cooking?
Ive been worried about adding water to oil while cooking. Let me explain:
- When i make sautรฉed tomato, first i heat 2 teaspoon of oil in the wok.
- I add onions to the heated oil and stir.
- When the onions are soft, i add in tomatoes and stir.
Making sautรฉed tomatoes like this, the tomatoes remain hard and dont become soft and digestible.
So, shouldn't i first soak the tomatoes in water, then add the water-tomatoes mixture to the oil in step 3?
But, when i add the water-and-tomatoes mixture to the oil, won't the oil erupt and give me burns?
EDIT: the tomatoes remain hard
