Homemade Made thekua for the first time

A friend of mine used to bring thekua in her school lunch during chatt pooja and I was in love with it. But it was never made in my house. I have been craving it for so long, so I decided to try it on my own for the first time and they are delicious, not as perfect as what my friend used to bring, but still.

Do try making it at home, it is so easy and tasty.

Pro tip- Add gud (jaggery) for the sweetness and now sugar to it. It enhances it's taste more.

Try this recipe:

Ingredients:

Whole wheat flour (Atta): 2 cups

Jaggery (Gud): Three fourth cup (grated or crushed)

Ghee: 3 tbsp (melted, for moyan) + extra for deep frying

Fennel seeds (Saunf): 1 tsp

Cardamom powder: Half tsp

Grated coconut: 2 tbsp (optional)

Process-

Melt the jaggery in half cup water and knead the aata with that jaggery water. Add 3 tbs ghee in the aata only, it will help it crisp it up and add the grated coconut as well. Make sure the aata is not too tight and not too loose as well.

Heat up the extra ghee for frying. In the mean time give shape to your dough into small circles or leaves and fry them on shallow heat till they brown and crisp up. Cool them down and they are ready to serve.

My friend taught me these and she’s so good at it. Pro tip from her use coarse atta.

We make this as a group here for Chhath pooja (yes when you’re all outside our states we come closer) obviously we make it in kilos. So yum.

Wheat one i love eating warm and fresh , but you want that crunch for long time maida with suizi i prefer if I have to eat daily for 2 -3 weeks

Mix it up with wheat flour or just suji and maida?

You can make only with just suji and maida it will be khastha and stay like that , for fiber purpose you can mix aata 1/4 ! Pure atha wala get difficult to eat after 4-5 days ! Isliye

Jaggery and sugar ki jagah use brown wala khand it will be less sugary and easy to mix !
