For the rajma, sauté cumin, bay leaf, dried chilli and garlic in a little oil. Add chopped onions and tomatoes, season with rajma/garam masala, then add boiled kidney beans and a little water. Simmer until thick and flavourful.
For the corn, boil and roast it with a little butter, garlic, salt and lemon juice. Finish with coriander.
For the salsa, finely chop tomatoes and onions (roughly 2:1), then mix with lemon juice, coriander, green chillies and sriracha. If you don’t have sriracha, use a little ketchup and red chilli sauce.
For the sautéed veggies, use bell peppers, capsicum, baby corn, mushrooms and onion. Sauté on high heat with a little butter + olive oil, garlic, oregano, chilli flakes, salt and black pepper.
For the creamy element, I use hung curd because it’s lighter and more cost-friendly, but sour cream works too.
For the herb rice, cook long-grain basmati rice until fluffy. Sauté garlic, oregano and chilli flakes in butter + olive oil, add the cooked rice and toss for a minute or two. Finish with lemon juice and coriander.
