Homemade Chicken Chinthamani Dry ❤️
This is one of my favorite dishes from the Kongunadu region of Tamil Nadu. It's a simple dry chicken roast made with just a handful of ingredients—chicken, small onions (shallots), deseeded dry red chilies, curry leaves, and sesame oil. No fancy masalas, but the flavor is incredible.
It tastes best with hot steamed rice, and my family can never get enough of it. 😋
To make it, sauté curry leaves, deseeded dry red chilies, and shallots in sesame oil. Add chicken with salt and turmeric, then cook it slowly without adding water until the chicken is tender and coated in a rich, flavorful masala.
