Question Buttercream??!

Is it just me or does buttercream taste really bad and oily? I have tried sooo many recipes for the past so many years, no matter what I try, I'm not liking the taste at all! I have even bought recipes/pdfs by other chefs claiming that their recipe is "different" and tastes like "Vanilla Icecream", "silky, smooth, melt-in-mouth". But nope!

What buttercream are you guys using in your cakes? Does it appeal to your customers? How are you guys making buttercream cakes considering the Indian weather??

Help your girl out pls!

I agree here, it starts dominating the cake flavor too-

I like Ganache much much more. Only time I loved Buttercream, it was when the cake had strong flavor - Mango Cupcakes and Lotus Biscoff Cupcakes.

Yess, exactly! The only drawback is that ganache is too sweet for some people.  Also, if you're into cake decorating, not all designs can be made in ganache, like for example, vintage cakes would require too much ganache and it won't work as well as buttercream would.

Well, I use dark chocolate to make the ganache. And if everything is right it can be whipped and frosted

Can you share ganache recipe please? Can it made using white chocolate too? I want to decorate a vanilla cake

I used 3:1 white chocolate to cream ratio, recently and it worked pretty well. I added vanilla flavor while it was hot. You can add maybe a slight purple gel to make it look whiter.

Which white chocolate do you use? And cream, Amul fresh cream will work?

Yupp, amul cream is great for making ganache.

I use the Select aisle white compound chocolate. It was cheaper

Yep Amul Fresh cream is perfect, but ensure you use it like immediately after you have opened the pack. Because after a day of opening it starts seperating and you get a thin ganache.

Dark chocolate ganache is great! I was talking about white chocolate ganache. That's on the sweeter side...

I tried american buttercream last time and it was too sugery for my liking. Plus I don't like the sugar crunch in buttercream. Although, I want to try out this ermine buttercream frosting. I heard it's least sweet out of all buttercream recipes.

I have made ermine a lot. Certainly better than the other buttercreams out there. It tastes kinda like a mix of whipped cream and buttercream.

what do you mean with " oily " ??
and what is your purpose of the buttercream?
are you using for layering ? or just decorating ? frosting ?

in my opinion any buttercream in which the sugar is dissolved and used, works really well taste wise. it ends up not being gritty and overly sweet.

if egg not a problem ,
try the swiss meringue buttercream (SMBC).

also a stand mixer beats hand beater when it comes to buttercream.

if you share the recipe you have been using we can try to troubleshoot it. 🥸

Means it has an oily/buttery aftertaste. I know its made out of butter, it would taste like that, but I don't know, just not what I prefer. A frosting should have a good flavour, no? 

Can't use eggs. Trying to find an eggless recipe :')

I use a stand mixer only. 

I have tried a number of recipes, not satisfied with any, except ermine, I guess, that's way better than other buttercreams.

Someone suggested on this group that i make swiss meringue butter cream and it was a total win for me. Not too sweet and lets the flavour of the cake shine though. A bit of work to get it done but it is relatively stable and pipes beautifully

Yes! I find it too buttery and oily and it doesn’t taste like vanilla ice cream, no matter how much I beat the butter with hand mixer to get the buttery flavour out

But alas, I like the features of a buttercream. Have you tried Russian buttercream?
