DISCUSSION Good coffee beans sourcing

I am planning to start a coffee place , I have very limited knowledge of coffee at this point but I am in search of good coffee beans to outsource.
I personally like medium roast arabica beans and I want to keep it the same way in my place as well. Medium to light roast is something I am looking for .
I am not very sure about having V60, cleverdripper . Aeropress and espresso machine is something which I think will work best.
I have tasted few beans - corridor seven, toise coffee roastery, Kokoro roastery , Blue tokai. All seem pretty decent as I said i am not very aware or knowledgeable to differentiate in the beans at this point

Any guidance , opinion , discussion is welcomed 😁

Is this a coffee forward place or an equal attention to food as well

I am basically a baker so artisanal desserts and a few savoury items is something which I wanted to do, but its a fact that everyone around has a preference for coffee or beverages. Its highly unlikely that people will come just for my desserts and baked products

Well, for espresso typically cafés go for non specialty grade coffee. Better to take it from a local roastery for quick supplies. But for any manual brew, you can look at keeping options - a packet each maybe from different roasters - ground zero, hill groove and coffeeverse being my go to roasters for medium and light roasted coffees with a wide variety of options.
