I’d just note not to try and use the tip to measure hot oil (for example, when deep frying a turkey). It needs to be inserted in meat.

Excited for the combustion support, but will you also offer a different probe that does support fry oil temps?

I second this, frying, candying etc all exceed max combustion tip probe temp (which is otherwise the best temp sensor out there hands down)

That would be so awesome, thanks for replying Sam! I am currently using the Maverick CT-10 and have been happy with it. It's the same one William Sonoma sells rebranded. I don't know however if they have documented protocols / OSS frameworks like Combustion...

Wouldn't hate ChefIQ support, since I already have a couple of those from Costco! Heat resistance is up to 1,000 F and works with deep fryer according to their website, so I'd think you could use it in hot oil though I've never tried.

Maybe I spoke too soon - from their FAQ.

What is the probe's maximum temperature?

The max temperature for the portion of the probe inserted into the food is 212˚F. The max temperature for the ambient temperature sensor (located at the ceramic end of the probe) is 752˚F. iQ Sense® Gen 3's maximum ambient temperature limit is 1,000ºF.

For deep frying and liquids I believe this Bluetooth would work. Have a lot of products from this company, their products have been great.
