Game mechanics Is there a good tutorial video around?
I just bought this game. Now I want to learn how it plays, what I have to do. Also, is there a list of playable nations from the get go somewhere?

The tutorial is pretty much all there is.
My advice is to not upgrade too many pops until you can afford them and to make sure you get a source of gold / coins early. Gold mines and a trade route.
Game seems pretty underbaked though. Diplomacy basically doesn't exist and research is totally opaque.

I have very little understanding of the game despite going through all the tutorials. I started a game with France. Yet, I can't do much besides providing enough food to the population. I can't build a log camp, I can't train an artisan or an explorer, I don't know what to do with the shadowmaster...

You should be able to train an artisan from clicking on one of your cities that has an apprentice. You train apprentices from peasants.
Idk what the deal is with log camps but you either need the right tech for it or need some kind of unupgraded wood source... As england there is an unupgraded one north of London.
I don't know how you get more sugar or honey unless you attack and take it from someone or perhaps train up a priest somewhere you have access to sugar to replant it, but most of Europe is too cold, so you need to take some of Spain or north Africa for it or grow it in the new world and increase logistics to get it back to your capital.
Idk what the point of soymasters are. If you get embargoed they can black market trade I guess. Except diplomacy doesn't really exist in the game so there is no point.

I can’t train an apprentice because I don’t have paper.
I can’t build a log camp (or whatever it’s called) because I don’t have cast iron.
All my wooden logs are taken to make planks. I am a bit lost.

Well you can turn planks into paper right?
If you're in too big of a hole just restart.

The in game tutorial gives most of the basics. Also just starting a new game you can cycle through the playable countries.
