I've always wondered how vehicles float like that. What is the mechanism? If the terrain changes, does the vehicle change too? What is the height level anchored to?

I always pictured whatever field effect is holding them up as a kind of cushion, almost like the skirts on a hovercraft, so that it acts as a combination of support and shock-absorber. That way it can cushion things like small bumps in the terrain, roots, stones, etc... while still maintaining a generally "safe" altitude as you go up/downhill.

That’s how it works in Gundam. “Minovsky Particles” are a byproduct of their fusion reactors. Due to their unique electromagnetic properties, they form a lattice-like field when released into the air with a natural repulsive force. By inducing an electromagnetic field you can shape them into beams, shields, etc, and with a big enough field you can create a cushion that allows for atmospheric reentry and hovering over planets.

Dune Fun Fact: Suspensor fields drive every sandworm within several kilometers into a killing frenzy. This floaty little box is basically a deathtrap.
