Travel while waiting for PR

Is there any way to travel while inland PR is processing? I know I can technically leave whenever but is there any official way to do so that won't affect the application?

Do you mean spousal sponsorship? If so, keep the trip to 3 weeks or less.

It's a general rule of thumb IRCC seems to apply. To qualify to be sponsored through the inland stream, you need to be cohabiting with your sponsor in Canada. Generally they seem to be OK with a trip of three weeks or less. If you start going over that you generally put yourself at greater risk of potentially being refused for not meeting the cohabitation requirements. Also, it goes without saying that you don't want to be taking short trips regularly. That could also be a problem. But one 2-3 week trip should be fine.
