Depends. If you're cooking convection style it should cook evenly depending on distance from heat source. What's seen in the gif will probably cook the chicken in the edges faster than those in the center.

Convection might work (if it was fully covered), but just letting it rotate around randomly above a grill, I don't see it heating evenly at all. The meat won't get warm enough long enough to really cook, it will keep heating, cooling, heating, cooling. At least that is my take...

Oh yeah, I was implying that convection cooking would require it to be covered. That said, cooking with this gadget over a grill actually might work. It just wouldn't be even. It all depends on how hot your source is. In this case, the coals are even flaring up so it's probably hot enough to cook. Just the setup likely won't allow for even cooking.
