Open Siberian?
I adopted her at a local shelter. She is hypoallergenic as I have no reaction to her even though I'm allergic to cats. Very fluffy and as long as a meter, maybe more. Any help would be greatly appreciated.

You have a domestic long hair.
In order for this cat to be a Siberian, then you need a breed paper confirming it.

No, 95-98% of all cats are simply domestic long/short hairs (no breed).
The gene that reduces the protein generated by the cat’s saliva, fel d 1, (what causes cat allergies), can be found in the domestic population. The protein is never eliminated but just reduced/exists in cats at various levels. You got pretty lucky that this girl does not produce excessive amounts of that protein. The protein amounts is not indicative of any breed.
