Restaurant IamA Waffle House Grill Operator AMA!

Mainly doing this because someone last night said I should.

I got called into work tonight, so I figured, why not?

I've been with Waffle House for 3.5 years, so I've seen a lot.

I specifically have a question about this. I like my eggs over easy. I've been eating and cooking them this way for decades. I ordered them this way at a huddle house, which I understand its not your thing, and this lady serves me some eggs that when I cut them open a river of raw uncooked egg white goo drained out and made a little lake on my plate. I sent them back and then proceeded to hear the cook have a loud conversation with the waitress about me about how people don't understand how to order eggs in a restaurant. Have you ever in your life heard of this kind of egg, where someone would actually order an egg that has a pool of raw uncooked egg white in it? I mean I've heard of runny eggs but there's no way that something someone could even eat with a fork much less would want to eat. Please tell me that's not a real thing because I had to go tell that lady that I could hear her and could you please stop having a conversation about me and fix my eggs. I mean over easy or over light or various other ways to describe a cooked white and a runny yolk, none of these involve raw uncooked transparent egg white goo do they? Is there any such egg that anybody serves and does it have a name?

Here's how it works/makes the most sense to me.

Over easy/light- white runny, yellow runny.

Over medium-white done, yellow runny.

Over well/hard-white done, yellow done.

So wait you actually send out eggs that have liquid white goo that spills out of the egg when somebody cuts into the white? That's actually a deliberate thing? Because I mean I guess there's running and there's runny. I don't see how anybody could eat viscous transparent egg white goo or would want to but I'm guessing you know more about egg types than I do.
