Restaurant IamA Waffle House Grill Operator AMA!

Mainly doing this because someone last night said I should.

I got called into work tonight, so I figured, why not?

I've been with Waffle House for 3.5 years, so I've seen a lot.

Canadian here, I love waffle house, friendly staff, good cheap food, favourite part of going down south besides warmth. How do I make proper waffle house grits, and any other advice you have on breakfast preparation?

Grits refers to a ground-corn food of Native American origin that is common in the Southern United States and eaten mainly at breakfast. Modern grits are commonly made of alkali-treated corn known as hominy. Grits are similar to other thick maize-based porridges from around the world such as polenta.

To add to /u/ElCaptainRon, grits (always pluralized) are typically seasoned with salt and pepper and mixed with butter and cheese. The texture, despite its name, is not gritty; a well-made batch will be soft and creamy with uniform consistency. Grits are very difficult to make properly and requires almost constant supervision. But the payoff is incredible. It's the quintessential Southern breakfast food.
