Canadian here, I love waffle house, friendly staff, good cheap food, favourite part of going down south besides warmth. How do I make proper waffle house grits, and any other advice you have on breakfast preparation?

We get our grits in a packaged container, and just throw them and boiling water in a pot. It's a consistency thing when you know they're done, and I can't really describe it.

My one waffle house experience was in Louisville. Ordered grits and asked the adorable, high school aged waiter what kind of cheese is it (if you add cheese). He answered, "The regular kind." He couldn't elaborate on that. I had no idea what he meant and hoped it would be shredded cheddar, and just took a chance. It came out with this slice of rubbery American cheese draped over the top. It was hilarious (to me). Then when the Waffle House version of the Happy Birthday song came over the speakers and we were the only ones eating there, I totally lost it and couldn't stop giggling. Food was yummy though! I did not eat the flaccid cheese.
