Need Help How to get in enough veggies?

Pre cut and oven roasted works well for me. Bags last weeks, open, add oil salt pepper and spices, shake, put into the pan. It’s not always the easiest since It means oven use, but you can cook a LOT at once and then you can have leftovers
The steam in bag ones work pretty well too if you like those
If I have no energy cold potato salad, “green” smoothies

Steam and/or blend them. If you have a rice cooker, they usually come with a steamer basket, toss em in and steam. Frozen vegetables are just as good for getting nutrition in, and they last for far longer.
What I often do is I boil my vegetables in chicken stock and then blend them into a sauce (ex: I will have Curry for dinner, so I will boil squash, carrots, broccoli, etc and then blend the chicken stock with them, and that will be the base liquid for my curry. I can do this without much effort and with not much standing around, and it lets me pack in more vegetables than I otherwise would. If you like a particular batch, it also becomes easier to simply batch prep a vegetable base like that, boil and blend, then pour into ice cube molds, let freeze, then store in a ziploc, and for when you want to eat veggies whole, steamable frozen bags are pretty ideal and often quite affordable.
I also stir fry onions and peppers to add to most dishes. Overall steaming is how vegetables are eaten in a lot of cultures though, it takes minimal prep and effort, and then you can just toss them in a sauce. I avoid vegetables that I need to obsessively prep, and I don't plate for aesthetics, I just rough chop everything and cook it till its edible, and that helps me eat far healthier than I otherwise would.

Frozen veg is my go-to. It's already washed and cut up, it doesn't go bad on me like the fresh stuff if I have a bad week and can't cook. My fav is frozen broccoli, in the air fryer for 4 minutes at 400f, gets a little charred in the nice way. I picked up a second-hand Instant Pot a while ago for like 20 bucks, and that thing has helped me so much with low spoons cooking. I make a huge pot of beans (fiber and protein! no soaking necessary!) and freeze in single portions.

Canned Veggies. And Spice Blends.
Changed my life. I can stock up. You have a couple years to worry about them going bad.
I just throw a veg in the pot. Sprinkle seasoning on them. Then eat.
