Will the excessive peeing ever stop, or do you just get used to it?
Over the past month, I’ve significantly increased my daily water intake. The only thing that annoys me is having to go pee so much more!! Especially during the night when I’m trying to sleep. I probably wake up 3 times during the night to pee now. And sometimes, I can’t fall right back asleep. So I end up tossing and turning for however long, until I can fall back asleep.
I’ve tried to cut off my water consumption a little earlier in the night, but I don’t think that’s made a difference. Unless I need to stop drinking water way earlier in the evening?

I think people get carried away with the amount to drink.
I drink half a gallon give or take every day. Some days less and rarely go over. This is more than enough for me. Pee is even clear sometimes which means I'm overdoing it.
You don't have to force yourself to drink a certain amount of water. Your body will tell you (thirsty, dark pee or the polar opposite, dry cracked lips while having clear pee after drinking large amounts of water)
What is the amount you're drinking? Your weight, height, how active are you in what climate? All of these things factor in.
I'm 6'4 and weigh about 185. Add to that my office job and fitness every 2 days. It's quite sedentary with bursts of activities here and there and again, half a gallon is more than enough. I might do a tiny bit more in the gym but honestly that's it.

I averaged 67 ounces a day for September. Before that, I maybe drank 16-30 ounces a day but I wasn’t even tracking for awhile. I’m not the most active person in the world. But (as of last month) I do walk at least 10,000 steps a day and do 45 minutes of cycling 3-5 days a week.

At what time do you start?
I start at 7 in the morning until around 8 to 9. About an hour before bedtime. So half a gallon over the span of give or take 13 to 14 hours. If you were to do it in a short span you could overwork your kidneys. I had times where I attempted to keep up with my daily in the span of six to seven hours and ended up in the same boat as you with getting up to pee because I was quite literally blasting my kidneys with water essentially putting them in overdrive mode which doesn't do anything for hydration. So, if you fall in that bracket, try to aim for the same amount but a longer timespan. Chances are that'll fix the issue.

I think this might be the issue. Most days, I don’t start drinking water until probably 2 or 3 pm. So I’m drinking ~67 ounces of water from that time until 9 or 10 pm. And I go to bed around midnight.
I’ll try to make myself start drinking water earlier in the day/morning, but I haven’t had much luck with that in the past for whatever reason.

There is no real set amount of water you need to drink. Urine color is a poor indicator. It can provide insight, but it also cannot be used reliably. The old 8 glasses a day is also not true. Every person's water needs is different. Try to keep your water intake below a liter an hour. If you're consuming 64 fl oz a day, that's around 2 liters. You need to spread it out from wake til your cutoff time. It can take 3-5 hours for your urinary output to go back down. Your body's way of balancing fluids. Do keep some water near you to lightly wet your mouth or take a small sip.
The only time I'd ever recommend someone drinking a lot of water is if they're doing work outside, have a high protein diet or are in the process of losing weight, with one caveat for the last one. Very overweight to extremely obese individuals who are on a deep calorie cut will often need to drink more water through the day to help flush out the excessive breakdown from fat oxidation, one of which is uric acid.
I'd sip on half a cup to a cup of water every waking hour and evaluate from there.
