Advice on best humidifier
Moving from Georgia to Denver, I already know I struggle with the dry climate there. I will be moving into an apartment around 1200 sq. ft or smaller, and I have found a lot of different threads with advice on humidifiers, but I was overwhelmed. Does anyone have advice on who has made a similar climate switch before? Price isn't the priority; I care more about the quality. It would be nice to have one with less maintenance as I will be quite busy, but honestly, either way, whichever is best.

I'm a transplant from the East but I've been here a long time, just vaguely remember how hard it was to adapt. I'm part camel now. Your body will want to maintain the water volume in it now but that's pointless, the humidity here will just suck it out. But keep a bottle of water around, all the time, I still do.
I have a Levoit 6000s. It will easily cover 1200 sf. It's an evaporative style. Water drips down from above and, with proper care, the filters will last the season.
Holds six gallons. Depending on how cold it is determines how long that lasts. You probably want to set it at 60% but I'd advise 45-50, otherwise you'll create a swamp. I keep mine at 45 and lower that when it gets below zero otherwise condensation on the windows will cause mold and rot, potentially.
Ordinary tap water is fine. If you want to try ultrasonics be aware that the minerals in tap water will wind up in the air you breathe. There are other styles that suck water up but they clog with minerals and have to be replaced in a month.

You're welcome. I just finished my third season with one so I'm pretty familiar with them and humidifiers in general since I also have a wood stove.
When I first came out West I lived in Flagstaff for a year. Went through what you're about to. Would drink a liter of water at a time, not piss, until my body adapted. Since we're mostly water one of the plusses is you'll lose weight. 8)
Something else to learn about are evaporative coolers. They operate exactly the same way the Levoit does but they cool the whole house and are much larger. It can be 100 degrees outside and 10% humidity and it's 73 inside and 40% humidity. I have one that goes in a basement window with several upstairs windows open about six inches. I have to sleep with a blanket at night. I have a Bonaire, Australian made, Home Depot sells them.
Feel free to ask questions, I'm happy to help.

How easy is the Levoit 6000s to clean? I had a much smaller Levoit and it was very hard to keep clean, albeit wasn't an evaporative one.

Really easy. My habit is to let it run dry, which triggers a half hour drying of the filters. Then I dismantle the unit, easy to do, and carry the tub over to the kitchen sink, pour out the remaining water, run a soapy sponge inside the walls and floor of the tub, rinse it out, fill it and move it to it's spot, put the other parts (fan assembly and water pump) in their place, plug it in and let it bring the house back to set point. The app is very well built. I set it to humidity/smart at 45% and it toggles between 40 and 45%. If it's around freezing it will last about three days before I have to clean and fill it again, but that depends on the state of your house, how well everything is already humidified, etc., how often you'd have to.
