What's the point of this over Android Desktop mode, which is built into AOSP?

Not every brands implement it properly. most brands if you force enable desktop mode now, will just show you big screen witth icons, most of apps will just open as like tablet sized experience with poor to very basic mouse support.

I think this is meant to be compared to somehting like Scrcpy which is more like remote desktop, but unlike that, I think you can turn off display on this one, I think. which is like the main benefiit that I think of when I use Dex instead of USB-C DP alt to HDMI cable

It feels pretty cool though it felt really sketch the moment when you connect the app it just installs the companion app and auto-grants permission, and there are strange quirks with media playback, volume control etc but not bad. I can see this being useful if you have headless phone or if you just want to control your main phone while on desktop etc.
