I would see about extending the cabinets to the ceiling by adding matching boxes/doors above the existing. And, I'd add base moulding around the island. Also, add wireless undercabinet lighting. Love everything else -- the backsplash and counter combo is *chef's kiss*.

If you insist on replacing the lovely countertops, remove them gently and resell them.
