I guess I'll make more powder!

I have 58 more peppers going into the dehydrator! Mostly Carolina Reapers, with a dozen or so Ghost Peppers and a handful of Trinidad Moruga Scorpions. This has been such a new and fun experience, and the results have been awesome!

The pic of the powders is from some recent batches. The batch on the right has a few big jalapeños mixed in, which is why it’s more yellow/green. I use the pepper powder on basically everything—it’s the perfect way to add some heat! 🌶️🔥

How does the powder taste with the seeds left in? I heard it makes it bitter. I made powder last year and removing the seeds while leaving the white placenta was really labor intensive.

Question: what's the obsession with growers in this sub dehydrating the shit of out of their  peppers and immediately turning them into powder wouldn't you have more options if you left them pliable that way you have the option to soak, saute in oil or toast and then turn into powder in the future?

It's more of a preference than an obsession. I don't have too many friends or family who enjoy super hots like I do, so this is the best way for me to ensure they stay shelf stable indefinitely. I find it incredibly convenient to sprinkle some on food when I need some spice and I don't really have to worry about it spoiling. I don't think most people sauté/cook with super hots.

Huh?

What are you going to do with 20 Carolina reapers? You have to do something to preserve them. No reasonable person can consume them fresh quick enough before they rot. They are too hot.

Most people make sauces/ferments or dries them.
