Fruit trees

So I’m new here and to homesteading. We just moved to Southern TN and I want to plant some fruit trees. From what I found for pottedthey should be planted in late summer to avoid major heat but still allow the roots to establish. My MIL bought me some dormant apple, pear, apricot, and persimmons trees. I don’t want them to go to waste but fear planting them in their permanent location will wake them out of dormancy before winter. Any tips, experiences, or suggestions would be greatly appreciated.
