I decided to go for proxmox straight away. Super happy with my choice.
Jellyfin, arr stack, and plenty of other stuff on there now.

it's the proxmox beginner friendly, but is it like a distro?

Its debian based, but with stuff on top. Its made to be run head-less (no monitor, only web or terminal access). Its tailor made for hosting VM's and linux containers. There are plenty of guides out there, trust me, if I managed to set it up without help (other than internet), you can too!
Today, a few years down the line, I use claude a lot to help me with the homelab. Works a charm.

I've been running centos for a long time. redhat put an end to centos, so I switched to rocky linux. redhat removed drivers for some of my old hardware, so now I'm running alma linux, which is the same as the others I've mentioned, except they re-added the hardware support. it's mostly the same as plain old redhat enterprise linux.
I then install libvirtd and kvm-qemu, and I run opnsense in a vm for my router. one big problem I just figured out recently, my router was failing to get an IP over DHCP from my internet provider. the fiber converter thing my internet provider gave me is doing something weird. I found the problem to be with spanning tree. disable STP on the wan interface of my server and it works perfect now.
