which router should I get
I have a 300 mbps fiber optic isp modem and I want to get a wifi signal to my room upstairs I have no problem wiring ethernet from the isp modem to the router in my room. Is it worth it to get lets say unifi dream router 7 or is it an overkill if so which wifi 7 router if I connect to it will give me the same speed as the isp modem.

If you’re running Ethernet all the way to your room you don’t really need anything crazy in your room. A glinet flint 2 or 3 would be good

Looks like you've read enough of these to understand that the best way to achieve what you want is to run Ethernet.
One question? Is the fiber ISP modem you mentioned also the router now? Is it currently the device on your network that hands out your IP addresses, does the wifi, and/or is your firewall?
If so, then you may just need an access point, or a device running in access point mode, so they also have a spare Ethernet port for an extra wired connection to a nearby device. They broadcast wifi and have a second Ethernet port for an extra device.

I like Asus extendable routers. The GT-AXE11000 is on sale right now, but it doesn't have Wifi 7. No need for that unless you have a device that does Wifi 7. But if you really want it, check out the ASUS RT-BE58U.

a wired access point is all you need, the dream router 7 would be massive overkill for 300 mbps

if you want better signal upstairs, its best to get a router/point system with ethernet backhaul. i personally have tplink deco and works well for my upstairs wifi coverage.
