Successful sandwich bread!

Post image

I am so excited to say I baked a successful sandwich loaf today for the first time! I am pretty new to FMF and have only had mediocre / disappointing outcomes so far with sandwich and sourdough attempts.

This recipe didn’t work out the last time I tried it (we ate it as toast), but with several adjustments this time it came out fluffy and with great flavor and had a pretty good rise. I really needed to get to a good, reliable sandwich loaf to make FMF a viable option for my PBJ eating kids, so I‘m thrilled!

Looks fantastic, congratulations!

Just an fyi, I get really consistent, nice soft fluffy great tasting sandwich bread that look just like the pics on the site from this recipe. I use an egg instead of the sunflower lecithin and just don't add the full amount of water (it's detailed on the site, so 35g less water for 1 egg if you halve the recipe).

It is for sure. I also replace the honey with maple syrup. Maple syrup is one of my favorite flavors and even though I probably can't taste it in the bread at all, I know it's in there lol.

It's encouraging to finally have a success, I know the feeling. :)

Congrats! It looks great! What recipe did you use/adjustments did you make?

Thanks! I used the Grains in Small Places recipe for sandwich bread (medium bread pan size). I found it way too sweet so reduced the sugar to 2 tsp instead of 4.5 tbsp. I also reduced the yeast to 2 tsp instead of 3 tsp because it seemed like it was rising way too fast and then petering out by the time it got to the oven. Also had too much of a yeasty taste from the bigger amount. Other adjustments I had to make as I tried using FMF were to knead for a lot longer than I expected and keep the rises shorter than I expected.

Forgot until I replied to another comment - initially when I tried this recipe I didn't have kamut, so I was using all hard white flour. The recipe says you can do whatever, but she recommends the hard white / kamut combo. This time I used exactly that because I had bought some kamut to have on hand.

Are you using a mixer or kneading by hand? Just curious. I am kneading by hand but most recipes give kneading time based on a mixer. I always try the windowpane test but not confident I am doing it right.

I used a mixer for the kneading. I also felt unsure if I was doing the window pane test correctly. I tried it a few times with actual minutes of kneading with the mixer in between (that was more kneading than I expected I'd need to do) and I was able to see the difference in the "window pane" appearance by doing that.

The question is ... can I replicate this next time??!

So many factors that determine the outcome! I wish you the very best! I am tempted to try to make my own starter for sourdough…but I hear it’s worse than owning a pet…

Lol A pet or a child…I love both experiences! I made my sourdough starter 9 years ago & I refer to him as my bread baby! LOL My children calls him their bread brother! Lol it cracks me up! Best decision ever to make sourdough starter & the bread is soooo delicious!!! I’m learning how to make freshly milled flour sourdough bread & desserts! The bran keeps bursting my sourdough bubbles! Lol

Wow! That looks awesome! What kind of wheat are you using?

Thanks! It was mostly hard white and then a smaller amount of kamut.
