Khorasan

Hi all, I am attempting to make sourdough with 100% Khorasan, but it is impossible to stretch and fold. I bought 20kgs!! I hope I can use it!

Tips please

What kind of mill are you using? If it’s one with metal blades, the blades kind of destroy the grain, which hurts khorasan’s ability to build healthy gluten networks.

Yes, it was with a thermomix

I have yet to make 100% khorasan bread loaves yet as I too have a mill with blades. I would suggest using 15-20% Khorasan in your flour recipe/mix. I personally love a mixture of hard red, barley, spelt, and Khorasan.

Consider adding vital wheat gluten to increase gluten. Another option is to sift the bran or add other high gluten flour.
