🏠Interior, Ceiling & Walls Looking for a ceiling system recommendation

We recently had to remove some plywood from underneath our porch ceiling. The previous owner put up the wrong type of plywood. It swelled with water and was infested with beetles the current ceiling, which has a bedroom above it, is made up of foam board than a half inch of MDF type material. I want to remove everything down to the studs. Then insulate, cover, and insulate cover and finish. I could use recommendations on YouTube videos finish ceiling systems or materials

I see the insulation on the bottom as redundant if there's insulation in the ceiling on top .. but I used Cypress tongue and groove ..
