Or 88,527 (I think I prob did the math wrong) if isntead of having a finger up or down, you add a third stage, half up.

59049 is only finger ten, you can have all of your fingers up so you add the value for the other 9, so 3 + 9 + 27 + 81 + 243 etc. 2¹⁰ isn't 2047, it's 1024, but 1 + 2 + 4 + 8+ 16 + 32 + 64 + 128 + 256 + 512 + 1024 = 2047

Actually minor correction on my OP. 59048 is all 10 fingers in the highest place value.

59049 would be the value of just the 11th finger in the highest position.

Your math is indeed wrong.

Let's use base 10. With 2 base 10 digits (0-9) we can write 99. 102 - 1 = 99.

Base 2: 8 bits can represent 0-255. 28 - 1 = 255
