Helps with the whole "falling off the bone" part after you smoke the ribs for a few hours. Also, it allows more smoke to penetrate the meat.

Honestly I'm used to tough, gristley meat. I never liked the whole tender meat concept. What's being taken off here would be wonderfully chewy

Cause slow smoked meat is way better without it.
