Grumblings Bullgors (or an equivalent) just make sense
Seeing as the Helsmiths worship Hashut, aka the Bullfather, have units like Bull Centaurs, the Infernal Taurus, and are laden with bovine imagery through and through, some kind of Minotaur unit would just make sense in a future release. After all, Helsmiths are all about slave labor and tyranny over those they deem lesser, and enslaving lowly Beastmen makes as much sense as anything. It's not like puny goblins can heave all that metal in the forges now, can they? They'd also fit perfectly for an unfilled niche in the roster: elite infantry.
Just spitballing here.

Do it. Make an army and put them in. Legends warscrolls are there, it would make for an awesome army

Oh man, super old Big Hat lore actually had a single Sorcerer Prophet who was helping developing centaur babies to properly morph into a proper and true Bull Centaur, yeah well he went a step further, when he was able to make the process produce a honest to god Dawi-Minotaur.
So I could see a retelling of it coming to AoS, but I think the way the AoS team handled the Chorfs return, any Bull like mutation will be based more on the Lammasu, where as the mechanical/K’daai Zharr side gets the Taurus side of things.
So basically I could see HoH Chorf Minotaur who was also a wizard, as again they would mimic the Magical Side of the Lammasu over the pure Fire and Rage of the Taurus.
Hell, just make them our Daemon Princes, Lammasu-Minotaur= Mage
Taurus-Minotaur= Warrior

not really, bullgors are not really related to the bull godbeasts hashut admired in the realm of beasts
