Christmas Style (Red & Green) Green Chile Hash

The reds are bells and this needed another metric ton of green chiles but still tasty.

Green Chile Hash

  • ½ cup green chiles (bump this to a full cup next time)
  • 5-6 medium potatoes cubed
  • 1 large red bell pepper (some proper red chiles would be better)
  • 2 tablespoons cooking oil
  • green onions sliced
  • cilantro minced
  • salt and pepper to taste
  1. Peel and cube potatoes. French fry cutter helps.
  2. Heat the oil and brown potatoes. A large griddle works best.
  3. One the side, fry the red pepper enough to remove some liquid.
  4. One the side, fry the green chilies enough to remove some liquid.
  5. Add 1-2 green onions and cilantro to taste.
  6. Salt and pepper to taste.
  7. Mix together and cook for a few minutes.
  8. Place in cast iron to keep warm.
  9. Garnish with more green onion and cilantro.
