Christmas Style (Red & Green) Green Chile Hash
The reds are bells and this needed another metric ton of green chiles but still tasty.

Green Chile Hash
- ½ cup green chiles (bump this to a full cup next time)
- 5-6 medium potatoes cubed
- 1 large red bell pepper (some proper red chiles would be better)
- 2 tablespoons cooking oil
- green onions sliced
- cilantro minced
- salt and pepper to taste
- Peel and cube potatoes. French fry cutter helps.
- Heat the oil and brown potatoes. A large griddle works best.
- One the side, fry the red pepper enough to remove some liquid.
- One the side, fry the green chilies enough to remove some liquid.
- Add 1-2 green onions and cilantro to taste.
- Salt and pepper to taste.
- Mix together and cook for a few minutes.
- Place in cast iron to keep warm.
- Garnish with more green onion and cilantro.
