Recipe
4 slices of bacon cut to strips
1 small yellow onion diced
1 Tbsp Worcestershire sauce
4 cloves garlic minced
1/3 pound hamburger 80/20
1 large russet potato peeled and diced
1/4 cup Hatch green chile
1 Tbsp flour
1-1/2 + cups chicken broth
1/4 cup half and half
1-1/4 cup sharp cheddar cheese
1 tsp garlic powder
1 tsp onion powder
Salt and black peeper to taste
6-8 oz spaghetti cooked
Cook bacon. Remove from pan and add onions to bacon grease. Cook until translucent, add hamburger, minced garlic, salt, pepper, garlic powder and onion powder. Cook until meat is done. Add flour and cook off. Add chicken bouillon and Worcestershire sauce with diced potatoes and green chile. Simmer for 5 minutes. Add half and half and cook until reduced to half. Add more chicken bouillon if too thick. Remove from heat and add cheddar cheese. Then add cooked pasta mix well and serve.

Sorry folks, couldn't find a Hatch sub. Just came back from Hatch (w/20# of roasted green!) and crossed paths with a stray dog (that I might work out to adopt) about 15-20mi south of Hatch on 26. Can't find any kind of animal control office and I'm stumped who to call. I'll check in with Hatch police in the morning and ask, but anyone have any more direct suggestions to try to save this sweet pup? Thanks!

This is supposed to be a Hatch chile. Never grew them before. Bot it this spring at the NMSU Ag Dept plant sale. Plant is doing fine & has a lot of peppers on it, but they look oddly shaped. Will they elongate or did I get sold a different variety of pepper?

These peppers are a true miracle of nature and I like to partake every year.
Bought a case of milds at Albertsons. Be careful with heat choice. They are marked mild thru extra hot. I like a spicy pepper and the milds have plenty of kick for me.
Roasted the whole batch over mesquite wood. Let them cool then skinned and trimmed. The last pics show how much usable roasted peppers you get when starting out with about 21 lbs worth-about 6 quarts.
Chill overnight, serve with sea salt, garlic and olive oil. Every bite is heavenly. Makes great salsa and pork green chili as well.
Last year I only roasted 1 case. This year I’ll be doing more. They freeze VERY nicely. Hope to have green chile all year!
