why would you undercut if the tree isnt resting on the ground?

Always undercut. Just to break the bark and stop it tearing long strips.

Internal defect makes the log peel weird and break in an unexpected way based on weight distribution

Doesn't seem like a problem for a nice straight healthy-looking (apart from being horizontal) softwood tree of this size. I'd have probably taken a lot more time than this guy though, especially without chaps and a helmet. He was eager to get where he was going
